Quark Nut Cake

You need:

160 g flour (I take spelt flour, as always)

1 package (37 g) custard powder

1 sachet baking powder

100 g grated marzipan (I put it in the freezer for some time beforehand!)

100 g ground hazelnuts (I use almonds)

80 g chopped walnuts (I use hazelnuts)

250 g quark (non-fat)

120 g (demerara) sugar

a pinch of salt

170 g soft butter

3 tablespoons rum

125 millilitre cream

4 eggs

This is what you do:

Pre-heat the oven to 160° C.

Seperate the eggs. Beat the egg whites.
Mix butter, sugar, marzipan and egg yolks. Stir in flour, baking powder and all other ingredients. Fold in the beaten egg whites in the end.

Fill the dough in a prepared (greased and floured) cake pan and bake it for about 45 – 50 minutes.
