Apple Cheese Pie


for the pie crust: (adapted from here)
200 g wholemeal spelt flour (you can use normal flour, too!)
a pinch of salt
1 tablespoon sugar
2 drops butter vanilla flavour (optional)
50 g margarine (I used soy margarine)
70 g yoghurt
2 tablespoons water

for the filling: (adapted from here)
4 apples
2 tablespoons brown sugar
1 teaspoon butter or margarine
100 ml apple juice
2 eggs
80 g sugar
a pinch of salt
250 g quark (non-fat)
250 g sour cream
1 package custard powder

Mix all the ingredients for the crust in a bowl and put it in the fridge. Core and peel the apples, then cut it in slices. Take the dough out of the fridge an put it evenly in the pie pan.

Preheat the oven to 175° Celsius. Melt the brown sugar in a pan, put the tablespoon butter/margarine in and deglaze with apple juice. Put in the apple slices and caramelise them a bit. Let them dry on kitchen roll paper. Seperate the eggs. Whisk the egg white with some sugar stiff, put it in the fridge. Mix the yolk with all the other ingredients, then fold in the beaten egg whites. Put the mixture on the pie crust and arrange the apple slices on it.

Bake for about 40 minutes. Let cool and enjoy!
